Under 400 calories for Mac N Cheese? Shut up!

Noah just left to Washington for the week and I’ve been hard core craving some Macaroni and Cheese. Noah doesn’t really love Mac N Cheese (I know WHAT is wrong with him?) so I thought it was the perfect opportunity to make some for myself! :)

The cheese I had on hand was goat, and I had some orecchietti pasta, which are like shells. So it’s definitely a twist on your traditional Mac but if you are a goat cheese fan like I am, believe me it’s just as delicious! The nice thing about goat cheese is that it melts easily because it is so soft, and so a little goes a long way.  Also, it’s one of the lowest calorie cheeses out there! If you used cheddar cheese you would add about 150-200 more calories to the meal! Plus this dish could be even lower cal if you use a low fat milk rather than cream, and if you omit the butter!

On top of everything it’s so easy to make and takes no time since basically all you have to do is wait for pasta to cook!

The Ingredients:

  • 8 oz pasta of your choice
  • 4 oz Goat Cheese
  • 1/4 cup Parmesan Cheese
  • 1/2 cup Milk of Choice
  • 1 TBSP butter (optional)
  • S&P

Cook Time: 20 minutes

Serves: 4

Calories per serving (using half and half for milk): 357, Carbs: 38, Fat: 15, Protein: 15

How to make it:

1. Cook your pasta in boiling water.

2. Drain your pasta and put the empty pot back on your hot stove.

3. Using this same pot place your butter, cream and goat cheese.

4. Stir until everything is melted and mixed together, you can keep the heat on low if you need.

5. Stir in the parmesan cheese, and salt and pepper to taste.

6. Add pasta back in and serve!
